That Street Corn Dip On Top Is A Game Changer.

The TLDR: roasted sweet potato, saucy seasoned ground beef, pickled onions, and a street corn-inspired dip over the whole thing. You can eat it with chips, or you can eat it with a fork. It is DELICIOUS.
Remember the hot honey cottage cheese bowls trend from a few months ago?
There was a trend going for a while that involved sweet potatoes and ground beef, with a dollop of straight cottage cheese over the top, and a drizzle of hot honey. My hot take: it always just felt a little forced. Dollop of straight cottage cheese on top? Just… straight?! I don’t know about it.
Hear me out: this is that same trend, but massively improved. The cottage cheese now gets worked into a street corn reminiscent dip that is packed with flavor that makes the whole bowl just work. I love it so much more than the original.
- The street corn doubles as a high-protein snacky dip.
- All elements work beautifully for meal prep.
- Family-friendly because each person can pick the elements that they want.

Not sure what is going on with me – normally I’m late and/or oblivious to recipe trends, but this is the third “viral” recipe trend I’ve tried (and loved) in a month. (See also: brownie puddings for two, and broth bowls.)
There are a lot of very weird things about living in this internet and social-media-heavy time, but the abundance of fun and amazing viral recipe ideas is a really nice little perk!

Street Corn Beef and Sweet Potato Bowls
- Total Time: 35 minutes

Description
One of my family’s favorite easy dinners that works SO well for meal prep! Sweet potatoes and ground beef get dolloped with a creamy high protein street corn style dip that is bonkers delicious.
Ingredients
High Protein Street Corn Dip:
- 1 cup cottage cheese, blended until smooth
- 2 heaping tablespoons mayo
- 2 heaping cups frozen fire-roasted corn, thawed and patted dry
- half of a large jalapeño, minced (ribs and seeds removed)
- 1/4 cup chopped cilantro
- 1/4 cup crumbled Cotija cheese
- juice and zest from half of a lime
- 1 avocado, cut into chunks (optional)
- 1/2 teaspoon Tajín (optional and/or can just be a garnish)
Sweet Potatoes:
- 2 large sweet potatoes, peeled and cubed
- 1 tablespoon olive oil
- 1 1/2 teaspoons salt
Ground Beef:
- 1 tablespoon olive oil
- 1 pound ground beef
- 2–3 tablespoons taco seasoning (I use Siete mild taco seasoning, about half the package)
Optional:
- Chips for serving
- Pickled red onions for serving
Instructions
- Make Street Corn Dip: Mix all elements together, saving the blended cottage cheese for last so you can control how much you want to add. Taste and adjust to your liking. (This doubles as a snack while you’re cooking. Win-win.)
- Roast Sweet Potatoes: Toss the sweet potato cubes with olive oil and salt. Air fry at 375 degrees for 13 minutes, until tender and lightly golden. (Or roast on a sheet pan at 400 degrees for 25 minutes.)
- Ground Beef: Heat the olive oil over medium high heat; add ground beef in chunks and cook, undisturbed, until you get some browning. Crumble into small bits, and add the taco seasoning and 2-3 tablespoons of water to make it a bit saucy.
- Serve: Plate sweet potatoes and ground beef in a bowl. Top with the corn dip. I always have this with pickled red onions, but that’s up to you! And dipping into this with chips is delicious.

Delish! I changed up the beef a bit by adding some diced fire roasted tomatoes to make it a bit saucier and heartier. This feels like a really adaptable dish, and seems like it would be easy to add or replace items as needed; but one thing I will make exactly as it is written each time is the topping. It is literal perfection. So creamy and balanced and tangy and just lick-off-of-the-spoon good. Great meal prep recipe!
THANK YOU for making a version of this that does not just have straight cottage cheese. I always have to disguise it in recipes (personal preference, the texture freaks me out) and the corn dip is perfect!! I couldn’t find fire roasted corn so I just defrosted regular corn and pan fried it to give it a bit of a char. Otherwise followed the recipe as stated. Delicious!
If I could give this 100 stars, I would. Excellent as leftovers. This was so surprisingly good that I will be making it again very soon and doubling so we can have more leftovers. Only thing is even though I cubed sweet potatoes, they took almost triple amount of time suggested (likely because of altitude here in CO). This is a keeper and will be added to regular rotation. Also another 3yo and 5yo approved meal!

Yes! Just keep the beef, sweet potatoes, and street corn dip separate. Can be reheated.
Made this last night with my sweet potato, cilantro and fire-roasted frozen corn. Didn’t realize I no longer had cottage cheese or ground beef. But this recipe is so forgiving and SO flavorful it all worked out! Used Greek Yogurt for the dip and chicken breast sautéed with a little chorizo for protein. No leftovers! Hubby usually grumbles about my “weird” recipes and was super dubious about the corn dip. No longer! He devoured it and actually asked me to make it again! WIN! Thanks PoY Team!

Yum! We love these bowls. They are a great source of protein and fiber. I skip the avocado in the corn dip. I use frozen sweet corn from Trader Joe’s. I add canned black beans. Some type of pickled red onions are a must. I like using Japanese sweet potatoes. Left overs are great. Thank you for this recipe!
I made this and it is DELICIOUS! I wanted a few more veggies so I added bell pepper and tomatoes to the ground beef. I will absolutely be making this again.

This has become my favorite meal—I’ve made it for the past three weeks and the leftovers are just as delicious as the first day! It is soooo satisfying and we load it up with avocado, pickled red onions, and blue corn tortilla chips to scoop up some of the corn mix. And FYI, I stopped worrying about blending up the cottage cheese and dirtying an extra appliance; the curds blend in well with the crumbled queso fresco!

I made this the other night and was extremely disappointed. The street corn had next to zero flavor and the sweet potatoes and taco seasoned beef were nothing to write home about. This one isn’t exactly going in my yuck bucket, but it will be going in my “definitely not worth making again” pile.
This was freaking amazing! I doubled the whole thing which I’m really glad about since there was enough corn dip to keep shoveling in my mouth as I was putting the leftovers away (after having totally stuffed myself at dinner). I missed the memo on the fire roasted corn so I used regular and added a little cayenne, but it was still good – will definitely try fire roasted next time. I used about 3/4 of the cottage cheese which seemed perfect (you’d never know it was in there) and sprinkled a little extra tajin and cotija on top, plus avocados and pickled red onions which added something special. The presentation was beautiful but it was the flavors that stole my heart. I will also be making that dip on its own. Sooo good!

I know it says pickled red onions are kind of optional but I think if you don’t have them, you really need some extra acid! I was running out of onions by the end of my bowl so I did some extra lime juice but think you could also use hot sauce! I also think the chips or some other kind of crunchy veg really help with textures here – flavors are 10/10 but need some crunch!
