Inspired by the house salad I’ve enjoyed at Thai restaurants, this is the perfect companion to several of the Thai-style dishes in this book. A bigger portion of this can almost be the centerpiece of a meal, served with a simple tofu or tempeh dish.

What’s the first thing you think of when somebody says, “Let’s get Thai food”? Most of my friends have an involuntary response: they start to sweat. Many people think that Thai food is hot, hot, hot. Well, maybe not, not, not. True, some Thai food can set off smoke detectors. But real Thai cooking emphasizes distinctive flavor combinations regardless of the heat. This soup, a takeoff on traditional Thai tom kha gai (a chicken soup), uses coconut milk, which is very soothing to the nerves. The ginger aids digestion, while the lime brightens up the overall flavor. The result is a soup guaranteed to jump-start even the most jaded taste buds.

Though you don’t see Pad Thai all that much in Thailand (I was told there that it was “a Chinese dish” and therefore inauthentic), it has become a standard at American Thai restaurants—and for good reason. The combination of sweet, salty, sour, and spicy in a variety of textures is irresistible. There’s nothing difficult about making Pad Thai at home. Just make sure you’ve portioned out all the ingredients before you start cooking and, especially if you’re entertaining, take care of the first two steps before your guests arrive. Information on Asian fish sauces like nam pla is on page 500.

If you thought you couldn't cook Thai food at home, this colorful and slightly spicy curry-a bit of a cross between a soup and a stew-will change your mind. It's a cinch to whip up after work and intriguing enough to impress your friends. Begin dinner with frozen egg rolls or take-out ones from a Chinese restaurant, and finish things off with ice cream or sorbet topped with chopped tropical fruit. GewÜrztraminer or Thai beer complements the menu nicely.

I'm probably not supposed to play favorites, but this recipe is definitely my favorite. Pad thai is the epitome of simple ingredients creating dazzling flavor. It's fresh, light, exotic, and faster than any takeout (unless, of course, you happen to live above a restaurant that delivers). Fresh lime is key to creating the unique flavor, but one lime should be enough for a single or even double batch of this noodle dish. Fish sauce, which you can find in the Asian section of most major grocery stores or at Asian markets, gives this pasta a more authentic flavor, but if you can't find any, skip it; this dish will still rock your world.

Recipes
Sometimes I like to enhance the Thai flavor of this recipe by adding a few sprigs of mint to the pot. If you can find Thai basil, that would add even more authenticity To make this even spicier, increase the amount of sweet chili sauce by 1/2 teaspoon. Find sweet chili sauce along with fish sauce in the Asian section of the grocery store or at an Asian market.

Delightfully soft yet chewy Thai sticky rice is traditionally prepared in a bamboo basket set over a metal pot of boiling water, but you can easily replicate the method at home with a saucepan and a fine-mesh sieve.
