Falls apart during cooking
There may be too much moisture in the falafel mixture. Add a bit of flour to the remaining mixture—but not too much, or your falafel will be dry. Cook one and see if it holds together. Also, make sure your oil is hot enough for frying—350°F is a good temperature.
