Over-the-top, super-indulgently, must-make, weekend brunch LIFE. Sleep in, wake up, pull on sweatshirt, assemble bed head top knot, grab coffee, make sandwich.

We’ve got butter croissants, a tangy tomato butter sauce (more like tomato jam?), salty thick-cut bacon, soft-cooked eggs, and a smash of guacamole to finish it off.

In the last month: I’ve made these for myself, then our team, then for our friend Joe when he stayed with us for a few days, and again during the week to make life a little more manageable. Overkill and I care zero percent. ♡

It is just THE ULTIMATE breakfast sandwich.

I extend all my breakfast sandwich love to any variations of this creation. English muffins. Pepperjack Cheese. Gouda cheese. Roasted red peppers. Magic Green Sauce. Fried eggs with a runny yolk.

How To Make The Best Breakfast Sandwich

Making these sandwiches could not be easier! Here’s what you’re going to do.

  1. Get your croissants nice and golden with a quick pop in the oven for a minute.
  2. Cook up your eggs in a skillet over medium-low heat until they’re perfectly soft. Gently swipe your spatula across the pan when the edges of the eggs start to create soft curds. Watch these closely so that you don’t overcook them.
  3. Build your breakfast sammie! Pile high some crispy bacon, tangy garlic butter sauce, guacamole (obviously), and a slice of pepperjack cheese. To keep it a bit more mild, you could also use a slice of cheddar cheese instead. Holy moly! You’re about to be in actual breakfast heaven with this.

How To Make Eggs For a Breakfast Sandwich

The essential is obviously the soft scramble, which we talked about at length earlier this week. This is no McD’s breakfast sandwich (although, to be fair, I have been known to eat and love a Sausage Biscuit with Egg in moments of weakness). But no, there are no perfectly formed egg disk here.

We’re talking about super creamy, gently cooked, soft scrambled eggs. Life changing.

If scrambled eggs aren’t your thing, you have options. You could make eggs on a sheet pan for a crowd. Cook your eggs fried or sunny side up. Poach it. Your choice!

Variations To Try

Though we really love these breakfast sammies with bacon, garlic butter sauce, guac, and cheese, it’s really a choose-your-own adventure here and there are endless combos that would work well and be very, very delicious!

  • Maybe you want to try a waffle or a tortilla wrap instead of a croissant? Love it! Those waffle nooks and crannies are perfect for holding your sammie components. I also love this full-on breakfast burrito!
  • Perhaps a layer of crispy fried hashbrowns or potatoes tucked in there? That’s a yes from us!
  • Did we hear someone say a little pickled onion topping for tang or hot sauce or some heat? We like the way you roll! Big flavors ahead!

Can I use a different kind of bread for this sandwich?

I mean, you could… but also a buttery toasted croissant here is just TOO GOOD. An English muffin would work great here in a pinch as well.

What other sauces could I use?

Magic Green Sauce would also be a REAL WIN here. Salsa. Your favorite hot sauce. Whatever you like to top on your eggs.

What could I serve this with?

A delicious simple arugula or mixed greens salad with vinaigrette would be great here. Also: fruit, juice and/or mimosas, pastries of some kind, and (obviously) lots of coffee.

How could I make this vegetarian?

Just omit the bacon! Maybe even replace with roasted mushrooms!? Yum.

Could I freeze this breakfast sandwich?

  1. Toast your croissants for a few minutes in a 350 degree oven, cut side down on a cooking sheet. You can also do this in the toaster if your croissants fit in there.
  2. When croissants are toasted and all other ingredients are out and ready, cook up your eggs. SOFT SCRAMBLED, remember?
  3. Assemble sandwiches immediately, while eggs are at their best – a layer of tomato sauce, eggs, cheese, bacon, and guac on top. Holy wow.

    Hello. My daughter wants to make your Ultimate Breakfast Sandwich for a 4H Cookoff Contest. We have to have individual nutrition information for each ingredient and total plate. It must follow MyPlate guidelines and less than 750 calories. Do you know the individual amounts for each ingredient: 1 or 1/2 egg, 2 slices bacon, 2tbsp guacamole 1/4 cup tomato sauce, 1 slice cheese?? Also small or large croissants?     I made this with a few adjustments. I did just regular scrambled eggs (not soft) and I didn’t feel like making the tomato sauce. I looked for tomato chutney at the grocery store but couldn’t find it, so I replaced it with an onion and garlic jam. It was super delish!!!

    I will be adding this to my favorite breakfast sandwich,

    I believe the most important part of this recipe is getting the garlic butter tomato paste right, I used 2 tablespoons of butter and sprinkled garlic salt over the butter, and added about a 2 tablespoons of tomato paste stirred in a bowl until creamy light red, their is no guidelines to making the perfect garlic butter tomato paste.

    My fiance and i always wing it when it comes to making new recipes kinda a little more exciting and adventurous.
